Black and Blue

The term black and blue means a piece of meat cooked to rare. Rare temperature on a steak for instance is around 125 degrees. If seared properly, that will give you a nicely browned and charred outside with a center that is cool and red throughout. Hence, black on the outside and cold (blue) in the center.
